I usually harvest in winter but can I harvest in the fall? What factors do I have to think about

I cant get beets to germinate to save my live! Especially for quick greens. I don’t know if its my ph in my water or what, but I’ve tried several different growing methods.

I have a lot of young beets in the ground that froze last week. Greens don’t look too great, but are the roots still okay?
